Spumante Brut Bianco
Straw yellow with greenish highlights and a fine and persistent perlage. The nose has an intense bouquet with dried fruit hints and fragrances ofwhite flowers. In the mouth it has a great balance between freshness and smoothness. Very good as aperitif and with shellfish appetizers.
Refermentation
long charmat (6 months). The hand-picked grapes are harvested before their complete ripening, the bunches are pressed and vinified in white and fermented at a low temperature (14°C). The second fermentation {prise de mousse) in pressurised tanks, made in December, lasted about 1 month. The wine refines on lees for about 6 moths before bottling
